Ingredients
1 cup quinoa
2 cups water or vegetable broth
2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas, etc.), chopped
3 tbsp soy sauce
2 cloves garlic, minced
1 tbsp sesame oil
2 green onions, chopped (for garnish)
Preparation
Rinse quinoa under cold water. In a saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed.
In a large skillet or wok, heat sesame oil over medium-high heat. Add minced garlic and stir-fry for 1 minute.
Add mixed vegetables to the skillet and stir-fry until tender-crisp, about 5-7 minutes.
Stir in cooked quinoa and soy sauce. Cook for an additional 2-3 minutes, stirring frequently.
Garnish with chopped green onions before serving.
